Castel de Paolis: Known for a focus on the redevelopment of ancient local and native grape varieties.  The Estate of the Santarelli family at Castel de Paolis were acquired in 1974 by Giulio Santarelli. In 1985, he started the project of research, development and recovery of ancient local native grape varieties and international grape varieties. 

Castel de Paolis is included in the Castelli Romani (Roman Castles), a collection of 14 historic hillside towns just south of Rome.  This area is defined by its ancient volcanic origin, this mineral-rich, sun-drenched terroir produces vibrant, fresh wines.

We will be joined by Fabio Marrone of Bravo Imports to explain the terroir and history of this ancient area.

The combination of these Roman wines and food will be paired together by Chef Rich Micheli.
